Ingredients for 4 people:
300g. chicken livers, 50g. capers, half cup of chicken stock, half glass of Vin Santo, 1 onion, 3 salted anchovys, extra virgin olive oil to taste
Preparation:
- wash and clean the chicken livers and put them in a saucepan with olive oil and the onion finely chopped
- add the Vin Santo and reduce
- add the stock and cooking for 20 minutes and correct the seasoning
- remove of the heat and add the capers and the anchovys
- chop all together and put the mixture on the canapè
